We blind taste tested a lot of butters for our shortbread, including some European imports. Luckily for us, Kate's Homemade Butter, a small family owned Maine producer, won hands down. Kate's Homemade Butter is the 2006 World Dairy Expo Dairy Champion in the Salted Butter category!

As Mainers we eat our lobsters with butter and lemon, so it only seemed fitting to give our "lobster" shortbread a tangy lemon glaze.

Our Lucky Lobster Shortbread has a shelf life of 3 weeks. It does NOT need to be refrigerated or frozen. If you wish, you can warm it up in the microwave for a few seconds, and it will taste fresh out of the oven!
